Thymes can play many roles in the garden - as groundcovers, for culinary purposes and for their ornamental value. Thymus 'Foxley' wears all three hats. It forms dense aromatic mats; the tiny dark leaves have a fine flavor; and the cream and green variegation of the foliage is attractive. We especially like the fact that the variegation appears mostly at the tips of the stems. During the cold weather when the variegation turns pink and cream, it looks as if tiny flowers had bloomed. This was developed at Foxhollow Herb Nursery, England, and introduced to the public in 1997.
